Serves: 2 people
Prep time: 15 minutes
Cook time: 10–12 minutes
Ingredients
1 whole lobster (600–800g), halved lengthways
3 tbsp melted butter
2 tbsp olive oil
3 garlic cloves, finely minced
Juice of 1 lemon
1 tsp lemon zest
1 tsp paprika
1 tsp dried mixed herbs (or Italian herbs)
1 tbsp fresh parsley, chopped
1 fresh red chilli, finely sliced (optional)
Salt and freshly ground black pepper
Lemon wedges, to serve
Method
1. Prepare the Lobster
Halve the lobster lengthways and pat the meat dry with kitchen paper.
2. Make the Marinade
In a bowl, whisk together the melted butter, olive oil, garlic, lemon juice, lemon zest, paprika, herbs, parsley, salt and pepper. If you enjoy a little heat, stir in the sliced chilli.
3. Marinate
Brush the lobster generously with the marinade, making sure it gets into every crevice. Leave to marinate for 10–15 minutes while you heat the grill.
4. Grill
Place the lobster shell-side down over medium-high heat.
Cook for 8–10 minutes, brushing with the remaining marinade every couple of minutes. The meat should become opaque and lightly charred around the edges while remaining tender and juicy.
5. Serve
Finish with a squeeze of fresh lemon, a sprinkle of chopped parsley and serve immediately.
Best Served With
Chargrilled vegetables
Garlic butter rice
Masala fries
Corn on the cob
Fresh garden salad
Coleslaw
Garlic bread
Chef's Tip
The secret to perfectly grilled lobster is to cook it shell-side down and baste it regularly. The shell protects the delicate meat from direct heat while the butter keeps it moist, creating beautifully tender lobster with a subtle smoky flavour.
